Symbol of the collaboration between two of the most important realities of the city, the refined Cibrèo Caffè – Helvetia & Bristol is just perfect for daytime breaks, whilst the scenographic Cibrèo Ristorante & Cocktail bar welcomes guests after sunset.
Cibrèo has taken an important step with the opening of its café inside the Helvetia & Bristol, which will mark the history of the new Florentine Renaissance in the world of food and wine and hospitality.

The design, which takes up the iconic motifs of the historic Cibrèo Sant’Ambrogio venue, plays on the contrasts between the teal tones on the walls, the red velvets of the seats, and the enormous golden chandeliers that descend from the mirrored ceiling.
The décor cannot miss the iconic posters of the Teatro del Sale – another signature place of the Cibrèo world alongside the Cibrèo Caffè and the Cibrèo Ristorante in Sant’Ambrogio – founded by the patron Fabio Picchi in 1979 and today carried on by his son Giulio.
Cibrèo Caffè – Helvetia & Bristol takes up the authentic philosophy of the brand: passing down the aromas and flavors of the most authentic Italian tradition, using only seasonal, sustainable and excellent products.
The culinary proposal was entrusted to Oscar Severini, Fabio Picchi’s right-hand man for many years, who brought back that cuisine, that has become legendary for its originality, sincerity and masterful execution, within the walls of the wonderful 5-star hotel.
Among the iconic dishes that are never missing from the menu: the Cibreo pâté, tagliolini cacio & burro and the slow-cooked meats. Flavors and textures that meet the flavors of “old” recipes with the most current techniques of contemporary cuisine.
In the wine list are included the best Tuscan labels, a selection of excellent wineries that cover all the most famous production areas of Italy and, for those who don’t want to give up a fresh bubble, a nice selection of French maisons.
In addition to the 2 internal rooms, Cibrèo Caffè offers an enchanting outdoor area overlooking the historic walls of Palazzo Strozzi. The restaurant is open from the morning, for a perfect breakfast, while from 3pm to 7pm it is possible to enjoy snacks such as the Cibreo club sandwich and the famous Tomato jelly.
On winter afternoons, the restaurant also offers a delicious Afternoon Tea with fresh cakes and delicious savory options. Really perfect for taking a break during a shopping session in the city center or a meeting with lifelong friends.
The Secret
The beautiful posters of the Teatro del Sale decorating the walls, just like the ones of the historic Cibrèo of Sant’Ambrogio, were created by Giulio Picchi himself, a talented artist and illustrator, and can be purchased in the Theater shop.
