Stefano Pinciaroli’s journey began very early as a pupil of Chef Daniele Sera<\/strong>, who boasts important past experiences at The St. Regis Rome<\/em>, Enoteca Pinchiorri <\/em>the three-starred Le Cary\u00e8res in Reims<\/em>, and continues today aiming at valorizing the territory and the local products.<\/p>\n\n\n\n After years of experience in fine dining, Stefano decided to give life to his venture and thus the idea of PS Ristorante was born. The original interior design<\/strong>, characterized by an enveloping palette of velvety grays and burgundy, enhanced by soft lights, takes inspiration from the rooms that host the restaurant, the old wine cellars of the main Villa, giving life to an environment of great charm.<\/p>\n\n\n The tables are embraced by the spectacular open kitchen<\/strong>, a stage for the Chef and his team who here do their utmost to create surprising recipes, capable of conquering the most demanding palates with a circular cuisine<\/strong> that enhances and respects the raw material.<\/p>\n\n\n\n Many of the products used come directly from the Villa Petriolo farm or, alternatively, from a virtuous network of small local producers<\/strong>. All characteristics that led PS Ristorante to receive the green Michelin star<\/strong>, a symbol of quality and excellence in the ethical and sustainable management of the gourmet project.<\/p>\n\n\n The menu<\/strong> strictly follows the seasons, changing often according to availability and seasons. The tasting menus are wonderful and focus on the re-interpretations of the classics, such as lamb or Chianina<\/em>, as far as the meat proposal is concerned, or panzanella<\/em> and legumes as per the vegetarian one.<\/p>\n\n\n\n Open all year round, with a romantic summer terrace<\/strong>, the PS Ristorante is the perfect address for a gourmet treat immersed in the wonderful landscapes where Leonardo Da Vinci was born.<\/p>\n\n\n\n On the longitudinal wall of the room, you can see a small coat of arms showing two ram’s heads on a red background. This is the coat of arms of the family who built the villa in the sixteenth century, the Alessandri family, a branch of the Albrizzi family who, specializing in producing very high-quality wool, chose this animal as a distinctive symbol.
