The new fish osteria inspired by the Versilia coast of the Four Seasons Hotel Firenze
Inspired by the culinary tradition of the Tuscan coast, Onde seafood restaurant is located inside Palazzo Del Nero which, together with Palazzo Della Gherardesca, houses the wonderful Four Seasons Hotel Firenze.
Inaugurated in October 2024, a new world of a thousand shades of blue of the sea comes to life in the 5-star Four Seasons Hotel Firenze, a real living museum, with its wonderful park, one of the largest private gardens in Florence.
Onde restaurant and Berni Bar are located inside a recently renovated wing of the complex, Palazzo Del Nero, inhabited by the family of the same name for over 200 years, a 16th-century building with 36 rooms and suites served by reception, concierge, and an events hall, the Sala Conventino, created inside a deconsecrated church from the early 20th century.
A contemporary osteria with the truest flavours of the sea where we want our guests to feel at home, free to talk to the brigade in the open kitchen.

With a more informal lifestyle mood than the offerings of Palazzo della Gherardesca – with its starred restaurant Il Palagio and the legendary Atrium Bar – Onde and Bar Berni can be reached from the entrance on Via Capponi or, from Borgo Pini, by crossing the beautiful Parco della Gherardesca in a few minutes, or even with the convenient golf cart service.
Onde offers seafood cuisine orchestrated by Executive Chef Paolo Lavezzini who has always had a special passion for Versilia, where his family lives. Together with Sous Chef Giacomo Cavicchi, Restaurant Manager Roberto Pennacchiotti, and F&B Director Alessio Anedda, he has created a contemporary osteria with a menu designed to be shared.
Starting from what “the fisherman brings every morning”, the chefs put different dishes on the menu every week, taking inspiration from the timeless fish classics stolen from the culinary culture of the 80s, such as raw fish plateau selections, oysters and champagne, sea bass tortellini, and lobster risotto.
Each dish is paired with the best champagnes and white wines, and the wine list expands with unexpected selections and contaminations from the nearby Bar Berni.
Located right next to Onde, Bar Berni, short for Bernardo Del Nero, founder of the ancient lineage and therefore “master of the house”, is the new all-day dining and vermouth bar of Four Seasons Hotel Firenze.
Here, guests can relax among the green internal and external botanicals, enjoying the splendid view of the Giardino della Gherardesca. Bar Manager Antonello Palermo and his team have created a selection of cocktails entirely based on vermouth, dedicated to the seven islands of the Tuscan Archipelago and their wild herbs, perfect to discover also in combination with Onde’s menu.
The interior design was created by architect Pierre-Yves Rochon who chose all the furnishings, such as the beautiful fabric with ancient blue sailing ships by Ratti that characterizes one of the rooms and the various works of art, among which the photographs of the duo Cerruti & Draime and the paintings of Redfield & Dattner stand out.
The restaurant opens in the evening from Friday to Monday and on Sundays for the Pranzo della Domenica (the Sunday Lunch), a real convivial experience served at the table with a room dedicated to buffet desserts.

The Secret
The beautiful Parco della Gherardesca overlooked by Onde and Bar Berni covers more than 4 hectares of parkland: an English garden that includes statues, fountains and a 19th-century Ionic temple.
